With culinary nationalism defined as a process in flux, as opposed to the limited concept of national cuisine, the contributors of this book call for explicit critical comparisons of cases of culinary nationalism among Asian regions, with the intention of recognizing patterns of modern culinary development. One of the only ethnographic studies of Dalit women, this book gives a rich account of individual Dalit women’s lives and documents a rise in patriarchy in the community. The author argues that as Dalits’ economic and political position improves, ‘honour’ becomes crucial to social status. One of the ways Dalits accrue honour is by altering patterns of women’s work, education and marriage, and by adopting dominant-caste gender practices. But Dalits are not simply becoming like upper castes; they are simultaneously asserting a distinct, politicised Dalit identity, formed in direct opposition to the dominant castes. They are developing their own ‘politics of culture’. Key to both, the author argues, is the ‘respectability’ of women. This has significant effects on gender equality in the Dalit community.

Rarely do Indian environmental discourses examine nature through the lens of caste. Whereas nature is considered as universal and inherent, caste is understood as a constructed historical and social entity. Mukul Sharma shows how caste and nature are intimately connected. He compares Dalit meanings of environment to ideas and practices of neo-Brahmanism and certain mainstreams of environmental thought. Showing how Dalit experiences of environment are ridden with metaphors of pollution, impurity, and dirt, the author is able to bring forth new dimensions on both environment and Dalits, without valourizing the latter’s standpoint. Rather than looking for a coherent understanding of their ecology, the book explores the diverse and rich intellectual resources of Dalits, such as movements, songs, myths, memories, and metaphors around nature. These reveal their quest to define themselves in caste-ridden nature and building a form of environmentalism free from the burdens of caste. The Dalits also pose a critical challenge to Indian environmentalism, which has, until now, marginalized such linkages between caste and nature.

One of twentieth-century India’s great polymaths, statesmen, and militant philosophers of equality, B. R. Ambedkar spent his life battling Untouchability and instigating the end of the caste system. In his 1948 book The Untouchables, he sought to trace the origin of the Dalit caste. Beef, Brahmins, and Broken Men is an annotated selection from this work, just as relevant now, when the oppression of and discrimination against Dalits remains pervasive. Ambedkar offers a deductive, and at times a speculative, history to propose a genealogy of Untouchability. He contends that modern-day Dalits are descendants of those Buddhists who were fenced out of caste society and rendered Untouchable by a resurgent Brahminism since the fourth century BCE. The Brahmins, whose Vedic cult originally involved the sacrifice of cows, adapted Buddhist ahimsa and vegetarianism to stigmatize outcaste Buddhists who were consumers of beef. The outcastes were soon relegated to the lowliest of occupations and prohibited from participation in civic life. India imposes stringent criminal penalties, including life imprisonment in some states, for cow slaughter, based on a Hindu ethic of revering the cow as sacred. And yet India is among the world's leading producers of beef, leather, and milk, industries sustained by the mass slaughter of bovines. What is behind this seeming contradiction? What do bovines, deemed holy in Hinduism, experience in the Indian milk and beef industries? Yamini Narayanan asks and answers these questions, introducing cows and buffaloes as key subjects in India's cow protectionism, rather than their treatment hitherto as mere objects of political analysis. Emphasizing human–animal hierarchical relations, Narayanan argues that the Hindu framing of the cow as "mother" is one of human domination, wherein bovine motherhood is simultaneously capitalized for dairy production and weaponized by right-wing Hindu nationalists to violently oppress Muslims and Dalits. Using ethnographic and empirical data gathered across India, this book reveals the harms caused to buffaloes, cows, bulls, and calves in dairying, and the exploitation required of the diverse, racialized labor throughout India's dairy production continuum to obscure such violence. Ultimately, Narayanan traces how the unraveling of human domination and exploitation of farmed animals is integral to progressive multispecies democratic politics, speculating on the real possibility of a post-dairy society, based on vegan agricultural policies for livelihoods and food security.
